Simple Kale & White Bean Bowl (From My Tower Garden)

An easy, nourishing meal built from fresh kale, creamy white beans, and simple ingredients — a real-life example of turning a harvest into something satisfying.

This is the kind of meal I come back to again and again.


Nothing fancy. No complicated steps. Just a few simple ingredients I had on hand — including fresh kale from my Tower Garden — turned into something warm, filling, and really satisfying.


For this bowl, I used a creamy cashew dressing I had already made for a recent Salad of the Week, which made it even easier to pull together.

What I Used

Here’s what went into this bowl:


  • Fresh kale (harvested from my Tower Garden)
  • White beans (rinsed and warmed)
  • Sweet potato (cooked until soft)
  • Onion and garlic (lightly sautéed)
  • Red pepper flakes (for a little heat)
  • Creamy cashew dressing (from a recent Salad of the Week)
  • Fresh lemon juice and black pepper (to finish)


Everything is flexible — this is just what I had on hand.


How I Put It Together

This is less of a recipe and more of a rhythm.


I started by sautéing onion in a splash of broth until softened, then added garlic and a pinch of red pepper flakes.


Next, I added the chopped kale with a little more broth, covered the pan, and let it wilt down.


Once the kale softened, I stirred in the white beans and let everything warm together for a few minutes.


To finish, I added fresh lemon juice and black pepper, then spooned the mixture over a cooked sweet potato and drizzled it with the creamy cashew dressing.
