Homemade Walnut Hemp Milk

Creamy homemade plant milk made with just four simple ingredients.

Every time I make this walnut hemp milk, I'm amazed by the transformation. Looking into the blender, it's hard to imagine that a handful of walnuts, hemp hearts, two dates, and water are about to become a rich, creamy plant milk.

It's incredibly simple to make, produces very little pulp, and has become one of my favorite plant milks for everyday cooking.

Why You'll Love This Recipe

  • Make it when you need it. Keep a few simple ingredients on hand and there's no need to make a special trip to the store for plant milk.

  • Made with 100% whole foods. No added oils, gums, emulsifiers, or other unnecessary ingredients.

  • Fresher than store-bought. Store-bought plant milk has to be processed, packaged, transported, and stocked before it reaches your refrigerator. When you make your own, you know exactly when it was made.

  • Make just what you need. The recipe makes about 6 cups, but it's easy to cut in half when you don't need a full batch, so there's less chance of anything going to waste.

  • Nutrient-dense ingredients. Walnuts are a good source of the plant-based omega-3 fatty acid ALA, while hemp hearts provide plant protein along with minerals such as magnesium, phosphorus, zinc, and iron.

Homemade Walnut Hemp Milk

Yield: About 6 cups

Ingredients

  • ½ cup raw walnuts

  • ½ cup hemp hearts

  • 2 Deglet Noor dates or 1 Medjool date, pitted (optional)

  • 6 cups water

Directions

  1. Add the walnuts, hemp hearts, dates (if using), and water to a blender.

  2. Blend until smooth and creamy, about 1 minute in a high-speed blender. If using a standard blender, you may need to blend a little longer to achieve a smooth consistency. If your blender has difficulty breaking down the walnuts, soaking them first can help soften them and make them easier to blend.

  3. For the smoothest texture, strain through a nut milk bag or a few layers of cheesecloth. Because this milk produces very little pulp, straining is optional, especially if you'll be using it in soups, smoothies, oatmeal, or baking.

  4. Transfer to a sealed glass jar or other airtight container and refrigerate for up to 5 days. Shake well before using.

Tip: The dates add a subtle sweetness that's especially nice if you're drinking the milk by the glass. If you're using it in savory recipes, oatmeal, or baking, you can easily leave them out.

A Note About Separation

Because homemade plant milk doesn't contain the gums or emulsifiers found in many packaged versions, it will naturally separate as it sits. That's completely normal. Just give the jar a good shake before using, and it will become smooth and creamy again.
