Winter Indoor Garden Update: What’s Growing in My Tower Garden

Even though winter is settled outside my window, my indoor Tower Garden is bursting with color, new growth, and a surprising amount of joy. Here’s a peek at what’s happening in my little garden corner this week — the small things that make indoor gardening so rewarding.


🫑 Lunchbox Peppers: Color Loading

My lunchbox pepper plant has officially kicked into overdrive. It’s loaded with peppers — and a few are finally turning red and orange.


These plants are so fun to watch — they go from calm and green to full-on color in what feels like a blink. I think we’re just about ready for harvest!

🍆 Mini Eggplant: A New Arrival

I officially have my first indoor baby eggplant!


Each morning I gently shake the branches (Tower Garden hack: hand-pollination!), and I’m considering adding one extra grow light to see if I can encourage even more fruiting.


Eggplant blossoms are some of the prettiest flowers in the garden — soft purple with bright yellow centers. They look like tiny ornaments this time of year.

🥬 Kale: The Comeback Story

A couple of weeks ago I trimmed my kale way back as an experiment… and it’s definitely responding.


Right now the new leaves are still small, but they’re bright, healthy, and growing a little more each day. Kale is amazing that way — you give it a reset, and it quietly rebuilds itself, one leaf at a time.


I’m looking forward to adding these tender new leaves to my salads once they size up a bit more.

🌱 New Seedlings: Off to a Strong Start

The seedlings I added recently are settling in beautifully. Give them one or two more weeks and they’ll be joining my Harvest Bowl salads.


There’s something magical about watching tiny seedlings take off inside — especially when everything outdoors is covered in snow.

💚 Why Indoor Gardening Makes Winter So Much Brighter

Growing indoors has become one of my favorite simple pleasures.


It grounds me.


It keeps me connected to something alive and hopeful.


And it makes eating healthy almost effortless — all I have to do is walk into the spare bedroom, clip what I need, and build a bowl that makes me feel amazing.


If you’re thinking about growing indoors, this little corner of my home is proof: you don’t need much space to grow something beautiful.
