Several years ago, I had a serious health wake-up call that completely changed the way I looked at food.
As I began following the Nutritarian way of eating, developed by Dr. Joel Fuhrman, eating a big salad every single day became one of the cornerstones of my healing.
Those daily salads helped me reverse high blood pressure and liver disease, lose 85 pounds, and regain my energy.
But while daily salads played a huge role in restoring my health, they didn’t always feel easy or satisfying at first.
It wasn’t until I learned how to combine flavors, textures, and ingredients in a simple, repeatable way that salads became something I genuinely looked forward to — not just something I had to eat.
That experimentation eventually became the foundation for what I now call Salad of the Week.
What Is Salad of the Week?
Salad of the Week is a weekly series where I share one complete salad bowl — not as a rigid recipe, but as a flexible framework you can make your own.
Each week, I show:
• What’s in my bowl
• How I combine leafy greens with a few key add-ins
• A simple oil-free dressing to bring it all together
• A suggested soup pairing to round out the meal
• Prep ideas that make it feel realistic for everyday life
The ingredients change from week to week, but the structure stays the same.
That consistency is what makes it easier to build nourishing meals without overthinking it.

Who This Is For
This series is for beginners.
For busy lives.
For anyone who wants eating well to feel less overwhelming — and a lot more doable.
Think of it as a simple way to let one bowl keep showing up: nourishing, flexible, and easy to return to.
Salad of the Week is something I continue to build and share each week, using the same simple structure with different ingredients.
And while salads are the foundation, they’re not the only way I use what I grow.
The same ingredients often show up in warm, simple meals throughout the week — another part of what I think of as “Tower to Table.”
