Introducing Salad of the Week: A Simple Way to Eat Better (Without Getting Bored)
Several years ago, I had a serious health wake-up call that completely changed the way I looked at food.
As I began following the Nutritarian way of eating, developed by Dr. Joel Fuhrman, eating a big salad every single day became one of the cornerstones of my healing.
Those daily salads helped me reverse high blood pressure and liver disease, lose 85 pounds, and regain my energy.
They were so large, in fact, that my husband jokingly started calling them my “BigAss Salads.”
The name stuck — and eventually made its way onto the bottom of my favorite wooden salad bowl.

But while daily salads played a huge role in restoring my health, they didn’t always feel easy or satisfying at first.
It wasn’t until I learned how to mix flavors, textures, and ingredients that salads became something I genuinely looked forward to — not just something I had to eat.
That experimentation led me here.
What Is Salad of the Week?
Salad of the Week is a new weekly series where I share one complete salad bowl — not as an exact recipe to follow, but as inspiration.
Each week, I’ll show:
- What’s in my bowl
- How I combine leafy greens and a few well-chosen add-ins
- A simple oil-free dressing to tie it all together
- Prep ideas that make it feel realistic for everyday life
Everything is meant to be flexible, approachable, and easy to adapt using whatever you’re growing — or buying — right now.
This series is for beginners.
For busy lives.
For anyone who wants eating well to feel less overwhelming — and a lot more joyful.
Think of it as a weekly glimpse into how one simple bowl can keep showing up: nourishing, flexible, and never boring.
